My first 2 batches of mozzarella turned out delicious! I'm making more tomorrow. When adding the salt, I also added some red pepper flakes and Italian herbs. I poured olive oil over the cheese ball for serving on crackers. My husband and I are addicted. I had no problem with the cheese not getting thick enough. In fact, it turned out more formed than I expected. I used a non- homogenized milk for those first two batches. Tomorrow I am just going to use regular homogenized milk and see how that turns out. I can't wait to make lasagna with my own homemade mozzarella and homemade ricotta.

Awesome and easy to use!

I made my first ever batch of mozzarella cheese a few nights ago, and it was an instant hit with my whole family. Both of my sisters wanted to know where to buy this cheese and were beyond miffed when I told them that they can't find it in any local store, because it's home made!

This was my first exposure to making cheese. They put together a great comprehensive kit. The only things that aren't in the kit are milk, common kitchen utensils and pots. A+!

What a lovely set.... I actually really enjoy the opportunity to make my own cheese with my husband. We lived in Italy and were always curious about the process. It is quite a learning experience. Each batch has turned out different, and I am only trying Mozzarella at this point... I love this craft and am thankful for the easy, straight forward instructions... (greater thanks for the hints, tips, and encouragement in the leaflet that even if it turns out different than first thought, it is still tasty)... I will definitely be coming back to test a new type of cheese from Urban Cheesecraft in the near future.

When Claudia Lucero set out to try her hand at cheesemaking, she was surprised at how difficult it was to find supplies and overwhelmed by some of the special equipment that some recipes required. After all, cheesemaking has been going on for centuries. Should it really be this complicated to try in a modern home? None of us has calibrated presses, humidity gauges, and acidity testers in our home kitchens.

After lots of research and perseverance, Claudia refined her own techniques for making fresh cheeses that don’t require aging and can be made at home with little or no special equipment. Now
she’s sharing her experience with fellow aspiring cheesemakers.

With an Urban Cheesecraft DIY Cheese Kit, all you need is a gallon of pasteurized milk (not ultra-pasteurized). The kits include the rest of the supplies such as cheesecloth, a dairy thermometer, vegetarian rennet, citric acid, and cheese salt. (Supplies vary depending on the kit you choose.) Just follow the instructions, and in about an hour, you’ll have fresh mozzarella, ricotta, queso blanco, paneer, or goat cheese. Once you get the hang of it, you can have fun experimenting with different spices, shapes, and recipes. Your taste buds will love the effort.
